The state has reported 561 cases of cyclosporiasis since May 1. That\u2019s nearly double the number of cases it recorded in all of 2025.<\/p>\n<p>State officials said that lettuce may also be involved, and listed it alongside parsley and cilantro as a food item that \u201ckeeps showing up repeatedly\u201d in interviews with infected people. However, they noted the increase in cases seen in North Carolina so far does not appear to be related to\u00a0<a href=\"https:\/\/www.consumerreports.org\/health\/food-recalls\/taylor-farms-pulls-mexican-lettuce-linked-to-cyclospora-para-a7871344748\/\">the large cluster of illnesses<\/a>\u00a0\u201cassociated with lettuce and Taco Bell\u201d restaurants in other states.
